Vineyard and terroir
The vineyards have clay and limestone soils and a mild, warm, windy climate. Chardonnay benefits from these conditions, while Sauvignon Blanc resists the wind well and is suited to Salento’s climate.
Vinification
The grapes are harvested by hand, selected and gently pressed, then the must is allowed to settle. The varieties are fermented separately: Sauvignon Blanc in small acacia barrels, with frequent stirring of the must during fermentation, and Chardonnay in temperature-controlled stainless-steel tanks.
Ageing
Each wine remains in its fermentation vessel for three months. The wines are then blended and bottled, followed by a further three months of maturation.
