Vineyard and terroir
The grapes come from vineyards in Salento.
Vinification
The grapes are harvested by hand, and each variety is vinified separately. Fermentation is traditional, at a controlled temperature of 27–28 °C in large Slavonian oak vats, with frequent pumping over. A long maceration of 30 days extracts as many polyphenols as possible and helps the malolactic fermentation begin in barriques.
Ageing
The Primitivo is aged for 12 months in American oak barriques made from Quercus Alba, with steam-bent staves. The Negroamaro is aged in medium-toasted French oak barriques from Tronçais. After blending, the wine matures for 6 months in large Slavonian oak casks of 3,000–5,500 litres, then rests a further 6 months in bottle.

Pairs with piquant cheeses and with dishes cooked on the grill or barbecue.
