Vineyard and terroir

Negroamaro and Malvasia Nera have historically been grown together in Salento, with eight Negroamaro vines alternating with two Malvasia Nera vines.

Grapes

Malvasia Nera's softness and aromatic character help balance the more angular nature of Negroamaro.

Vinification

The grapes are harvested by hand. Vinification is traditional, at a controlled temperature in large wooden vats, for 30–45 days.

Ageing

The wine spends 6 months in medium-toast French oak barrels, which add subtle spice and wood notes. It then spends 6 months in large Slavonian oak casks of 3,000–5,500 litres, which help it develop structure without too much oak influence. A further 6 months in bottle lets the bouquet mature and become harmonious before release.

Tasting profile

Rich, expressive and aromatic. The nose is intense, with cherry jam and hints of cinnamon and fig. The palate combines harmonious fruit with touches of licorice, subtle tobacco nuances and pleasant acidity. Oak ageing adds depth and structure. The tannins are balanced and lead to a long finish.

Serving and pairing

Pairs with southern Italian dishes, especially roasted red meat, game served with a berry sauce, and medium-aged cheeses.
