Vineyard and terroir
The fruit comes from vineyards in the southern part of the province of Asti, on the hills of Alto Monferrato. The soils are clay and limestone, and planting density is 4,000–4,500 vines/ha.
Vinification
The grapes are harvested by hand and gently pressed. Fermentation with yeast takes place under pressure in temperature-controlled stainless-steel tanks. Alcoholic fermentation is stopped by cooling, after which the wine is filtered to retain its natural sweetness.
Serving and pairing
Suitable as an aperitif and with all kinds of desserts.
