Vineyard and terroir
Arzenhof lies at 250–390 m on a hillside above the western shore of Lake Kaltern. The site occupies a southeast-sloping morainic talus cone composed of calcareous gravel, porphyry and quartz sand with sufficient loam, and benefits from a Mediterranean microclimate. The Guyot-trained vines are 25–35 years old and yield 35 hl/ha.
Grapes
Cabernet and Merlot.
Vinification
Spontaneous fermentation in oak vats is followed by three weeks of skin maceration. The wine is then transferred to barriques for spontaneous malolactic fermentation.
Ageing
Eighteen months in barriques.
Technical data
Acidity: 5.4 g/l. Residual sugar: 2 g/l. Ageing potential: more than 10 years.
Tasting profile
Bright ruby red. The layered bouquet combines fresh cassis and cranberries with lightly balsamic, earthy and savoury notes recalling coffee and eucalyptus. Firm and powerful on the palate, it shows dark berries, peppery spice and soft, very fine-grained tannins. The finish is delicate, subtly mineral and finely shaped.
Serving and pairing
Serve at 16–18 °C. Pair with braised or slow-cooked beef and lamb, venison loin, game ragout, ossobuco, mature hard cheeses such as Parmigiano or mountain cheese, truffle dishes and mushroom risotto.
