The selected fruit comes from the Pajore vineyard, at 190–350 metres above sea level.
Grapes
The wine is made from a selection of grapes from the Pajore vineyard.
Vinification
The grapes are usually harvested in mid-October, once they have reached optimal ripeness. They are pressed and fermented in stainless-steel tanks at a controlled temperature.
Ageing
The wine matures for 24 months in oak or chestnut barrels.
