Vineyard and terroir

The wine comes from the Pajè MGA, a 1.8-hectare vineyard owned by Basso and Giordano. Its south-western to western exposure and limestone-and-clay soil, rich in calcium and crossed by sandy veins, shape a wine distinguished by complexity, good acidity and fragrant, youthful-fruit aromas.

Grapes

100% Nebbiolo.

Vinification

Fermentation takes place in stainless steel at 30°C, followed by 28 days of maceration on the skins. Malolactic fermentation is completed.

Ageing

The general regimen calls for at least 30 months in 25–50 hl oak casks. The 2021 vintage spent 30 months in oak casks followed by nine months in bottle.

Technical data

The 2021 vintage was bottled in May 2025, with a production of 13,333 bottles. The standard wine description gives June as the bottling month. Cellaring potential for the 2021 vintage is 30 years from harvest.

Tasting profile

Brilliant and vertical in character, Pajè preserves its characteristic floral note and the freshness of its fruit over time. The 2021 vintage is complex, with intense, ripe red fruit, balanced tannins and a persistent finish. Its vineyard character combines complexity and good acidity with fragrant aromas of youthful fruit.
