Vineyard and terroir
Fornaci comes from estate-owned hillside vineyards in the municipality of Tassarolo. Their name recalls a brick kiln that formerly occupied the site, while the soils are notably clay-rich.
Grapes
100% Cortese.
Vinification
The grapes are transferred immediately to the cellar and softly pressed to extract the finest juice. Fermentation proceeds slowly for up to 20 days at a controlled 18–20°C, preserving the aromatic character of Cortese di Gavi.
Ageing
The wine is bottled in February or March so that it receives a minimum period of bottle maturation before release.
Technical data
Alcohol: 12.5% vol. Total acidity: 5.2 g/l. Yield: 2.5 kg per vine and 95 q/ha. Harvest period: 6–14 September.
Tasting profile
Fine and delicate, with floral notes of hawthorn and lily of the valley alongside banana, citrus, hay and mint. The palate is balanced and fresh, leading to a fruit-accented finish. It is enjoyable from the spring after harvest, becomes more expressive after several months in bottle and can keep for several years.
Serving and pairing
Serve at 10°C in tulip-shaped glasses. Its balanced, fresh style is suited to regular enjoyment at the table.
Label / history
The name Fornaci refers to the brick kiln that once stood where the vineyards are now planted.
