Vineyard and terroir

Pilin is produced from selected fruit drawn from the winery’s oldest hillside vineyards. Only the healthiest and ripest bunches are chosen. The wine has been produced since 1984.

Grapes

100% Cortese.

Vinification

The selected bunches spend 30–40 days partially drying in small wooden crates. They are then softly pressed to extract the finest portion of the juice, followed by separation from the first sediment. Once fermentation begins, the must is moved into barriques, where both alcoholic and malolactic fermentation are completed.

Ageing

The wine remains in barriques without further racking until the following September. It is subsequently racked and lightly clarified, then cold-stabilized and bottled. Release follows two years of bottle ageing, once the wine has attained maturity and balance.

Technical data

Alcohol: 13% vol. Total acidity: 5.4 g/l. Yield: 2 kg per vine and 66 q/ha. Harvest period: 15–30 September.

Tasting profile

Its most rewarding drinking phase begins around the third year after harvest and can continue for many years. The style demonstrates Cortese’s capacity to produce a complex wine that becomes more harmonious with time.

Label / history

The name Pilin commemorates the producer’s grandfather, who was known by that nickname in Gavi. His commitment to improving the family’s land through winegrowing passed to later generations, and the estate gave his name to its most demanding wine.
