Vineyard and terroir
Salluvii is the estate’s base wine, sourced from multiple hillside plots across the Gavi district. The vineyards occupy different sites and include soils of varied composition.
Grapes
100% Cortese.
Vinification
The grapes are moved immediately to the cellar and softly pressed to extract the finest juice. Fermentation proceeds slowly at a controlled 18–20°C for as long as 20 days, preserving the characteristic aromatic richness of Cortese di Gavi.
Ageing
Bottling takes place in February or March, allowing a minimum period of bottle maturation before release.
Technical data
Alcohol: 12.5% vol. Total acidity: 5.2 g/l. Yield: 2.5 kg per vine and 95 q/ha. Harvest period: 6–14 September.
Tasting profile
The wine is already enjoyable in the spring following harvest and reaches a more complete expression after several months in bottle. It can remain in bottle for several years without loss of quality.
Label / history
Salluvii takes its name from the ancient people who inhabited the Gavi area.
