Vineyard and terroir
Selected fruit comes from Bisol’s vineyards in the hills of Valdobbiadene, at an altitude of 250 metres. The grapes are particularly rich in malic acid.
Grapes
Verdiso and Pinot Blanc together account for 10% of the vineyard plantings used alongside Glera.
Vinification
The grapes are harvested at the end of September. Before fermentation, they undergo skin-contact cryomaceration for one night at a very low temperature to accentuate varietal character and intense fruit aromas. The first fermentation takes place in stainless-steel tanks, followed by a second fermentation in sealed, chilled autoclaves, as required by Prosecco DOC regulations.
Serving and pairing
Suitable throughout a meal and with a wide range of foods.
Label / history
The Jeio range takes its name from Desiderio Bisol, whom his wife called Jeio. After the First World War, he revived the family business and played a major role in its growth and reputation. The family-owned winery traces its history to 1542.
