Vineyard and terroir
The grapes are grown in Bottega’s vineyards in the Montalcino wine-growing area of Tuscany, around 40 km south of Siena. The hilly area has widespread slate soils, which provide good drainage and allow the vines to reach groundwater deep below the surface. Its Mediterranean climate is among the warmest and driest in Tuscany. The fruit comes from vines aged 5–25 years in the southeastern part of the appellation and from six-year-old vines in the west.
Vinification
The grapes are usually harvested by hand in early October, partially destemmed and gently pressed. Fermentation takes place in temperature-controlled stainless-steel tanks. This is followed by 25 days of maceration with daily punch-downs. The wine then rests in steel tanks for three months before malolactic fermentation.
Ageing
The wine is aged in three-year-old Slavonian oak barrels of various sizes.
