Vineyard and terroir
The wine comes from Veneto, specifically the Asolo area in the province of Treviso at the foot of Monte Grappa. Breezes from the Adriatic meet cold Alpine air, while warm but moderate summers and mild winters allow slow, even ripening. The soils are described as clay and sandstone.

Vinification
The grapes are picked according to quality and ripeness. Free-run must is transferred to stainless-steel tanks for cold static settling. Fermentation with selected yeasts proceeds at a controlled 18°C and is completed in 8–10 days. After tasting and selection of the base wines, the wine is filtered into stainless-steel autoclaves; sucrose and selected yeasts are added for secondary fermentation by the Martinotti–Charmat method at 14–15°C. At the required pressure, alcohol and sugar levels, the wine is chilled and cold-stabilized at -2 to -3°C, then filtered, tasted and checked before bottling.

Asolo Prosecco Superiore DOCG. Alcohol: 11% vol., an indicative figure that may vary by ±0.5% vol. Available in a 750 ml bottle.
Tasting profile
Pale straw yellow. The delicate bouquet combines pear and green apple with acacia blossom. Fresh and smooth on the palate, with an ideal balance between acidity and savoriness. Its overall character is elegant, fruity and refined.
Serving and pairing
Serve at 8–10°C. Suitable as an aperitif and with vegetable or fish appetizers, assorted soups, risottos, and first courses based on fish or vegetables.
