Vineyard and terroir
The fruit grows at 200 m above sea level on sunny, breezy hills around Asolo. The landscape is gently rolling, with vineyards and olive groves. The soils are marl and clay, rich in minerals and organic matter.
Vinification
The grapes are harvested by hand into small crates during the second half of September. They are transported directly to the winery in a small steel truck and processed while fresh. Temperature is continuously controlled throughout production. Vinification takes place under pressure in an oxygen-free environment in stainless-steel tanks. The base wine undergoes secondary fermentation by the Martinotti–Charmat method over 40 days, resulting in approximately 8 g/L of residual sugar.

Label / history
Benedictine monks began spreading the area's culture of grape growing and winemaking from 1000 AD; it later flourished during the Venetian Republic. The wine received gold medals at Mundus Vini in 2021, 2022 and 2023, and silver medals at the Mundus Vini Spring Tasting in 2020, The Champagne & Sparkling Wine World Championships in 2023 and The Prosecco Masters in 2023.
