Vineyard and terroir

The production area is Veneto. Hilly vineyards enjoy a temperate climate, with warm summers and mild winters under the protection of the Alps. Day–night temperature variation supports even ripening while preserving freshness and aromatic character. Vinification

Free-run must obtained through gentle pressing is placed in stainless-steel tanks for cold static settling. Selected yeasts carry out fermentation at a constant 18°C over 8–10 days. After the base wines have been tasted and selected, the wine is filtered into stainless-steel tanks; sucrose and selected yeasts are added for secondary fermentation by the Martinotti–Charmat method at 14–15°C. Once the required pressure, alcohol and sugar levels are reached, the wine is refrigerated and cold-stabilized at -2 to -3°C, filtered and checked before bottling.

Technical data

Prosecco DOC Extra Dry. Alcohol: 11% vol., an indicative figure that may vary by ±0.5% vol. Available in 200 ml and 750 ml formats.

Tasting profile

Pale straw yellow, with a fine, persistent perlage. The delicate, lightly aromatic bouquet shows pear and green apple followed by acacia and wisteria blossoms. The palate is fresh and subtle, balancing acidity and savoriness within a harmonious structure and closing with a long, persistent finish. The overall style is lively, harmonious and refreshing.

Serving and pairing

Serve at 8–10°C. Ideal as an aperitif and with appetizers, assorted soups, risottos, and first courses based on fish or vegetables.
