Vinification
Free-run must obtained by gentle pressing is transferred to stainless-steel tanks for cold static settling. Fermentation with selected yeasts lasts 8–10 days at a constant 18°C. After selection of the cuvées, the filtered base wine enters an autoclave, where selected yeasts initiate secondary fermentation at 14–15°C. Once the target pressure, alcohol and sugar levels are reached, the wine is cold-stabilized, filtered and subjected to sensory checks before bottling.
Technical data
Prosecco DOC Frizzante. Alcohol: 10.5% vol., an indicative value that may vary by ±0.5% vol. Bottle format: 750 ml. The bottle is traditionally sealed with string.
Tasting profile
Pale straw yellow. The delicate, lightly aromatic fragrance combines acacia blossom with apple and banana. The palate is fresh, pleasant and subtle, with balanced acidity, harmonious structure, savoury character and a dry finish.
Serving and pairing
Serve at 8–10°C as an aperitif or with appetizers and delicate first courses.
Label / history
Traditional string closure recalls an artisanal method of securing the bottle and emphasizes the wine’s connection with its place of origin.
