Vineyard and terroir
The grapes come from Veneto. The territory combines geographical and climatic conditions that promote suitable ripening and grape quality. Its clay and sandstone soils provide good drainage, while optimal sun exposure supports ripening.
Grapes
Glera and Pinot Nero. Pinot Nero accounts for 10–15% of the blend.
Vinification
Glera and Pinot Nero are vinified to create the pale-pink base wine. Secondary fermentation takes place in autoclaves according to the Charmat method at a controlled temperature of 14–15°C. The wine remains in prolonged contact with selected yeasts, with the process lasting approximately 60 days in total.
After the required pressure, alcohol and sugar levels have been reached, the wine is refrigerated and cold-stabilised at −2 to −3°C. It is then filtered and checked before bottling.
Ageing
Extended contact with selected yeasts takes place during the approximately 60-day Charmat process.
Technical data
Prosecco DOC Rosé Millesimato Extra Dry. Alcohol is 11% vol., with a possible variation of ±0.5% vol. between vintages. Available formats are 200 ml and 750 ml.
Tasting profile
Pale pink in colour. The elegant, intense bouquet combines floral notes of rose with peach-like fruit aromas. The palate is dry, soft and balanced, with a rounded, full-bodied structure. The overall style is youthful, lively and aromatic.
Serving and pairing
Serve at 8–10°C. Suitable as an aperitif and with fish soups or mushroom-based dishes.
