Questo vino
Vineyard and terroir
Produced in Veneto, where Adriatic breezes meet cool Alpine air. Warm but moderate summers and mild winters encourage slow, even ripening. Mineral-rich soils and the local microclimate contribute finesse, structure and vivacity. The product page identifies the soils as clay and sandstone.
Grapes
Glera.
Vinification
Free-run must obtained by gentle pressing is transferred to stainless-steel tanks for cold static settling. Fermentation with selected yeasts proceeds at a constant 18°C for 8–10 days. Following tasting and selection of the base wines, the wine is filtered into stainless-steel autoclaves; sucrose and selected yeasts are added for secondary fermentation by the Martinotti–Charmat method at 14–15°C. Once the intended pressure, alcohol and sugar levels have been reached, the wine is refrigerated, cold-stabilized at -2 to -3°C, filtered and checked before bottling.
