Vineyard and terroir
The vineyard is situated 350 m above sea level on cadastral plot 56 and contains vines around 25 years old. Grapes are selected from the estate’s oldest vineyards, which provide less than 10% of the total harvest. Only the smallest bunches are used, and the wine is produced only in years with the most favourable weather and crop quality.
Vinification
The grapes are harvested entirely by hand. Fermentation takes place with natural yeasts in stainless-steel tanks, followed by a six-week maceration. Each stage of vinification is extended compared with the estate’s other wines.
Ageing
The wine matures for three years in 20 and 35 hl Slavonian oak barrels, with a higher proportion of new barrels than is used for the estate’s other wines. It then clarifies naturally by settling in stainless-steel tanks and rests for at least 18 months in bottle in the winery’s cellars before release.

Label / history
The name “p.56” refers both to cadastral plot 56, where the estate’s oldest vineyard is located, and to an old farm founded in the 1940s.
