Vineyard and terroir
For the 2008 vintage, the fruit came from two vineyards in the commune of Passirano. The vines were 21 years old on average.
Vinification
Harvest began on 29 September 2008. The grapes were hand-picked into small crates, hand-sorted and chilled. They were placed in steel vats with their stems, and the juice flowed by gravity into the fermentation tanks. This avoided conventional pumps and the grassy or herbal notes they could introduce. Fermentation and maceration lasted 20 days.
After ageing, the wine was bottled by gravity without agitation or exposure to oxygen, preserving its aromas and flavours.
Ageing
The wine matured for 18 months in small oak barrels, 65% of which were new. The 2008 vintage was bottled on 14 April 2010 and rested for a further five years and three months in bottle in the winery’s cellars.
Label / history
Research begun by Ca' Del Bosco in 1996 established that the variety, long mistaken for Cabernet Franc in Northern Italy, was Carmenere. The label depicts a wolf in sheep’s clothing, representing the strong, free-spirited Carmenere concealed behind its former identity as Cabernet Franc. Because the variety is not typical of Lombardy, the wine is classified as VdT.
