Vineyard and terroir
The fruit comes from 18 estate plots in the Franciacorta area, in the province of Brescia. The vines average 31 years old. The local microclimate, above-average planting density, cluster thinning and a gradual reduction in inorganic fertiliser use shape the quality of the grapes.
Vinification
The grapes are harvested during the second ten-day period of August. Each variety is fermented separately under strictly controlled temperatures, using both stainless-steel tanks and small oak barriques. The must undergoes eight months of débourbage, clarifying through settling. After blending, secondary fermentation takes place in the bottle according to the traditional méthode champenoise. No dosage liqueur is added after disgorgement; other Franciacorta wines typically receive 7.5 ml of dosage syrup per bottle.
Ageing
After secondary fermentation, the wine remains on its lees in cellars at no more than 12 °C for over four years before disgorgement.
Tasting profile
The wine has a complex, harmonious palate and a notably generous mousse.
