Vineyard and terroir
The fruit comes from five vineyards in Sebino, northwestern Italy. Together they cover 150 ha, and the vines average 35 years of age.
Vinification
The grapes are harvested by hand, destemmed and pressed. Fermentation lasts 17 days under controlled temperatures, with maceration at 28–30 °C. Malolactic fermentation takes place in small oak barrels.
Ageing
The wine matures for 11 months in small oak barrels, 50% of which are new. It is bottled with a filling system designed to exclude oxygen and prevent agitation, then rests in bottle for a further two years and six months before release.
