Vineyard and terroir
The fruit comes from vineyards in the Rai area of the province of Treviso, near San Polo di Piave, at 30 metres above sea level. The clay-sandy soils contain gravel. Planting density is 2,888 vines/ha, with yields of approximately 12 t/ha.
Vinification
The grapes are harvested by hand in September, sorted and gently pressed. Following the initial fermentation, yeast and sugar are added to the base wine for a secondary fermentation under pressure in sealed stainless-steel tanks. Malolactic fermentation is avoided. The wine is stabilized and microfiltered before bottling.
Ageing
The wine is not aged, but rests in the cellar for 30 days after bottling and before release.

Label / history
The wine carries the Vino Spumante Aromatico di Qualità (VSAQ) designation introduced under Italian legislation in 2009 for sparkling wines without DOC or DOCG status that are produced from aromatic varieties by the Charmat method. Epsilon bottles are wrapped in coloured film, offered in white, black, pink, platinum and gold. White and black bottles replace the conventional label with a barcode that can be scanned by mobile phone for detailed wine information.
