Vineyard and terroir
The grapes come from Brenton, in the hills of the municipality of Roncà. The soils are basaltic in origin and rich in mineral substances. Yield is 90 quintals per hectare (9 t/ha), and harvest takes place during the first ten days of September.

100% Durella.
Vinification
The first fermentation takes place in stainless-steel tanks under controlled temperature. In the spring following harvest, the wine is bottled with added yeasts for the traditional-method second fermentation.
Ageing
Évolution is conceived as Amedeo’s second journey, with approximately 120 months on the lees before disgorgement. The extended sur-lie period is intended to harmonize its organoleptic components and give the carbon dioxide a silkier, less perceptible texture. Each release may differ from the preceding and following one and is produced only rarely in a very limited edition.
Technical data
Alcohol is approximately 12.5%. Production is around 500 bottles, exclusively in a 750 ml format. The illustrated release is labelled Pas Dosé and Dégorgement 2023.
Serving and pairing
Serve initially at 7–8°C. It can accompany an entire meal, from delicate fish and shellfish to more savoury preparations such as stuffed pasta, white meat and roasts. It is not intended for dessert.
Label / history
Amedeo Évolution was inspired by long-aged traditional-method wines. It represents the accumulated experience and experimentation of Ca’ Rugate with the traditional method and the Durella variety.
