Vineyard and terroir
The wine is made from selected grapes drawn from Ca’ Rugate vineyards around Monteforte d’Alpone. The volcanic soils are rich in trace elements, with a calcareous and partly clay structure. Yield is 90–100 quintals per hectare. Grapes are picked at the end of the harvest in an overripe state to build greater extract and volume.

Vinification
Fermentation is divided between 225-litre barriques and 20-hectolitre large casks. The wine remains in those vessels on its lees for 6–8 months.
Ageing
Lees ageing lasts 6–8 months in barriques and large casks. The structured style reaches its peak after several years.
Technical data
Soave Classico DOC. Alcohol is approximately 13%. Production is about 10,000 bottles, in 750 ml and 1,500 ml formats.
Tasting profile
Deep straw yellow. The intense, persistent bouquet is floral and recalls ripe fruit, dried fruit and almond. Warm, soft and full-bodied, the palate is likewise intense and persistent.
Serving and pairing
Serve at 12°C. Pair with seafood cuisine, cheese soufflés or vegetable flans; it may also be served as an aperitif.
