Vineyard and terroir
Monte Fiorentine lies north of Colle Rugate at Brognoligo di Monteforte d’Alpone. Its volcanic soils are rich in mineral substances. The vineyard yields 90–100 quintals per hectare, with harvest in mid-October.
Grapes
90% Garganega and 10% Trebbiano di Soave.
Vinification
White vinification is followed by fermentation in stainless-steel tanks at 16–18°C for approximately 10–15 days.
Technical data
Soave Classico DOC. Alcohol is approximately 12.5%. Production is about 50,000 bottles, in 750 ml, 1,500 ml and 3,000 ml formats.
Tasting profile
Deep straw yellow. The fine, delicate nose combines exotic fruit and citrus. The palate is soft, persistent and savoury, with a notably structured profile. It reaches its best expression after 1–2 years in bottle.
Serving and pairing
Serve at 10–12°C. Pair with fresh cheeses, fish dishes and vegetable mousses, or pour as an aperitif.
