Vineyard and terroir
The grapes come from Brenton, in the hills of the municipality of Roncà. The soils are basaltic in origin and rich in mineral substances. Yield is 90 quintals per hectare (9 t/ha), with harvest beginning in early September.

100% Durella.
Vinification
The first fermentation takes place in stainless-steel tanks under controlled temperature. In the spring following harvest, the wine is bottled with added yeasts for the traditional-method second fermentation.
Ageing
The wine remains in bottle on the lees for approximately 60 months before disgorgement.
Technical data
Alcohol is approximately 12.5%. Production is around 10,000 bottles, offered in 750 ml and 1,500 ml formats.
Tasting profile
The bouquet recalls freshly baked croissant crust, spices and white peach. The palate is vigorous and enveloping, driven by incisive, crystalline acidity. Wine Enthusiast’s assessment of the 2011 also described floral and orchard-fruit aromas, ripe apple, pear and mineral notes, vibrant acidity, persistent fine bubbles and a bone-dry finish.
Serving and pairing
Serve initially at 7–8°C. Pair with shellfish and seafood, white meat, pasta or rice and cured meats. It can be served as an aperitif or throughout a meal, except with dessert.
