Vineyard and terroir
The fruit is selected from Ca’ Rugate’s estate vineyards in the hills around Montecchia di Crosara. The predominantly limestone soils are rich in gravel and coarse mineral material. Yield is 90 quintals per hectare (9 t/ha), with harvest during the second half of September.
Grapes
45% Corvina, 40% Corvinone and 15% Rondinella.
Vinification
Ripasso follows the traditional practice of refermenting a young Valpolicella on the pomace remaining after dried Amarone grapes have been pressed.
Ageing
The wine ages for approximately eight months: 50% in tonneaux and 50% in stainless-steel tanks.
Technical data
Alcohol is approximately 13.5%. Production is around 70,000 bottles, in 750 ml and 1,500 ml formats.
Tasting profile
Deep garnet red in colour. Concentrated cherry and other red-fruit aromas are joined by floral and spicy nuances. The palate is full-bodied and velvety, shaped by soft tannins.
Serving and pairing
Serve initially at 16°C. Pair with grilled or roasted red meat, game, medium-aged cheeses and pasta or other dishes served with meat sauces. It can also be poured as a red-wine aperitif.
Vintage notes
The 2012 received a points-based recognition, but the Italian and English versions of the wine page report different scores: 90 and 91 points respectively.
