Vineyard and terroir
Garganega is sourced from the Colle Rugate vineyards at Brognoligo di Monteforte d’Alpone. The soils are volcanic and rich in minerals. Harvest begins in early September, with a yield of 90 quintals per hectare.
Grapes
100% Garganega.
Vinification
The first fermentation takes place in stainless-steel tanks. In the spring following harvest, the still wine is bottled with added yeast and undergoes its second fermentation in bottle.
Ageing
The wine remains with its yeast lees for approximately 24 months, developing flavour and complexity, before disgorgement and labelling.
Technical data
Spumante Metodo Classico with approximately 12.5% alcohol. Annual production is about 25,000 bottles. Listed formats are 750 ml, 1,500 ml, 3,000 ml, 6,000 ml, 9,000 ml, 12,000 ml and 15,000 ml.
Tasting profile
Pale straw yellow with greenish reflections and a fine, persistent perlage. Delicate fruity aromas are joined by a light yeasty note. The palate is harmonious and almost velvety, finishing dry and crisp.
Serving and pairing
Serve at 8°C. Pair with shellfish, seafood and fish dishes. It is suitable as an aperitif or throughout a meal, excluding dessert.
