Vineyard and terroir
The wine is made from selected Molinara grapes grown in estate vineyards in the hills of Montecchia di Crosara. The soils are gravelly and predominantly limestone. Harvest begins in early September, and the yield is 90 quintals per hectare.
Grapes
100% Molinara.
Vinification
The grapes undergo a short maceration on their skins for one to two days, followed by the first fermentation in stainless-steel tanks. In the spring after harvest, the still wine is bottled with added yeast for its second fermentation.
Ageing
The wine matures on its yeast lees in bottle for approximately 24 months, gaining flavour and complexity, and is then disgorged and labelled.
Technical data
Spumante Metodo Classico with approximately 12.5% alcohol. Production is about 15,000 bottles. Formats comprise 750 ml, 1,500 ml, 3,000 ml and 6,000 ml.
Tasting profile
Coral pink with salmon-toned reflections. Aromas evoke small woodland berries, redcurrants and wild strawberries, complemented by delicate almond notes.
Serving and pairing
Serve at 8°C. It can be poured as an aperitif with crudités or meat and paired with meat dishes; it is also presented as suitable throughout a meal.
