Vineyard and terroir
GaioGaio is a red wine from young, recently planted vines in Contrada Calderara Sottana. The planting derives from rigorous massal selection and includes ungrafted vines.
Ageing
Maturation takes place in steel and large casks, followed by bottle ageing. No durations are specified.
Tasting profile
Ruby red in colour, with fruity and mineral aromas that evolve over approximately one hour. The palate is mineral, light-bodied and approachable. The broader wine presentation also describes floral and lightly spicy notes.
Serving and pairing
Serve in an ice bucket. GaioGaio can accompany aperitif snacks, first courses and simply prepared meats, or be served throughout a meal. Suggested dishes include spaghetti with wild asparagus or cavolicelli, dolphinfish with cherry tomatoes and capers, and grilled king oyster mushrooms.
Label / history
The wine is dedicated to the winemaker’s father as a child, when he was called Gaio.
