Pale straw yellow, developing golden notes with ageing. The aroma is fruity and citrus-led, with apple and sulphurous notes. Delicate on the palate, with slight minerality, light body and good acidity. Its appeal rests on simplicity rather than force.
Serving and pairing
Serve in an ice bucket and open at least 30 minutes before serving. It works as a chilled aperitif and with oily fish, thin pasta dressed with delicate sauces, or turkey breast. Suggested dishes include nettle tagliolini with Bronte pistachio cream, raw-fish carpaccio and asparagus.
