Vineyard and terroir
Produced in limited quantity from a parcel in Passopisciaro planted with both centuries-old and new vines. Passopisciaro lies at approximately 680 m and has more earth and fewer stones than Calderara; its wines are described as deep and highly structured.
Ageing
Maturation varies and takes place in previously used barriques, alternating with stainless steel. The wine subsequently rests in bottle for 12 months.
Tasting profile
Ruby red, developing garnet tones with age. The nose is fruity, intense, persistent, ethereal and tannic. The palate is mineral and very persistent, with a substantial tannic charge, an opulent entry and a powerful, tannic finish.
Serving and pairing
Serve at 18°C and decant for 1–2 hours. Its scale suits substantial first courses, roasts and game. Suggested dishes include pappardelle with hare ragù, rare steak and goat’s cheeses.
