Vineyard and terroir
Fruit comes from centenarian vineyards in Calderara Sottana and Taccione. Calderara lies at approximately 700–750 m and has sandy ground rich in volcanic ripiddu beneath a layer of stones. Wines from this contrada combine elegance, structure and longevity and require prolonged maturation in wood.
Vinification
Fermentation takes place in medium-small vessels with a short maceration.
Ageing
The wine matures for many years in large Slavonian oak casks, with stainless-steel periods forming part of the élevage. Bottle ageing lasts 6–18 months.
Tasting profile
Ruby red in youth, moving toward garnet with age. The nose is intense, persistent and ethereal, with the vinous character associated with Nerello, vanilla nuances, earth and sulphurous notes. The palate is mineral, austere and persistent, balancing soft tannins with a supple texture. Pronounced freshness, including in mature vintages, supports continued evolution over many years.
Serving and pairing
Serve at 18°C and decant for 1–2 hours. Pair with pasta dressed with meat ragù, meat main courses and grilled meat, or serve alone as a contemplative wine. Specific suggestions include macaroni with Nebrodi wild-boar ragù—or pork or beef ragù—grilled meat and charcoal-grilled mutton.
