Vineyard and terroir
Piedefranco – Ungrafted comes from a new planting established through rigorous massal selection in a part of the vineyard traditionally regarded as exceptional. The vines are entirely ungrafted.
Ageing
The wine undergoes long maturation in used barriques, alternating with steel, followed by a variable period in bottle.
Tasting profile
The colour is ruby red, developing garnet tones with age. The nose is fruity, intense, persistent, ethereal and tannic. The palate is mineral, opulent and very persistent, with the barrique-derived tannins well integrated.
Serving and pairing
Serve at 18°C and decant for one to two hours. Pair with first courses featuring game ragù, braised meats or stews. Suggested dishes include risotto with venison shank, braised saddle of hare and cured Nebrodi black wild boar.
