Vineyard and terroir
The fruit comes from young vines in contrada Calderara Sottana, established through rigorous massal selection and including some ungrafted vines.
Vinification
“Pista & Mutta” is a traditional method in which the must is pressed and immediately transferred away from the skins. The absence of pomace produces less colour and fewer tannins. Historically, farmers made this style for themselves and could drink it after only a few months.
Ageing
Ageing takes place in steel, followed by bottle ageing.
Tasting profile
Deep ruby-pink in colour. The aroma is intense and persistent, with fruit and mineral notes. The palate is full-bodied, persistent and mineral, while the vinification method restrains colour and tannin.
Serving and pairing
Serve at 16°C or in an ice bucket. It can be enjoyed alone or paired with first courses, fish soup and squid. Suggested dishes include taglierini with rabbit sauce and squid with garlic and lemon.
Label / history
The wine is dedicated to ancient winemaking methods. Its name records the two essential operations: pressing (“pista”) and immediately transferring the must (“mutta”).
