Vineyard and terroir
The fruit comes from low-yield qualified vineyards and is harvested by hand. Parellada is sourced from 75-year-old vines at 340 m. Production takes place at the family winery in Sant Quintí de Mediona.
Grapes
50% Xarel·lo and 50% Parellada.
Vinification
The grapes are gently pressed in a century-old Dubois press. Production follows a minimal-intervention approach based on natural settling.
Ageing
The wine spends 204 months ageing horizontally in rima, with prolonged lees contact under controlled cellar conditions. Natural cork closures are used, and every bottle is disgorged by hand.
Technical data
Brut Nature Cava de Paraje Calificado. The limited release comprised 4,000 bottles, with approximately 700 still available when described.
Tasting profile
Golden yellow, with fine, continuous bubbles. The complex, elegant nose layers tertiary aromas with ripe fruit, toasted brioche and delicate French-pastry nuances. The palate is structured and combines vibrant acidity with refined fruit. A silky, velvety finish leaves persistent impressions of honey and buttery nuts.
Serving and pairing
Pair with veal carpaccio and Parmesan, natural oysters, baked turbot with butter, or an aubergine, goat’s cheese and truffle mille-feuille. It may also be served on its own.
