Vineyard and terroir
Parellada and Xarel·lo are selected bunch by bunch from two low-yield vineyards at 340 m in Sant Quintí de Mediona. The vines are more than 75 years old and combine elegance with the structure required for prolonged ageing.
Grapes
60% Parellada and 40% Xarel·lo.
Vinification
The grapes are pressed at low yield in a century-old Dubois press originally from Champagne. Production follows a minimal-intervention approach based on natural settling.
Ageing
This Brut Nature matures for more than 120 months, developing depth, finesse and persistence.
Technical data
Cava de Paraje. The limited edition comprises 6,000 bottles. It has been produced at the family winery in Sant Quintí de Mediona since 2012.
Tasting profile
Intense yellow, with a clearly defined crown and fine, persistent bubbles. Tropical fruit and ripe orchard fruit lead the complex nose, supported by delicate pastry, yeast and toasted-bread notes. The palate is broad and balanced, with creamy texture and notable persistence. Its fruity character returns in a long, elegant finish.
Serving and pairing
Pair with tuna tartare and avocado, pan-seared scallops, baked sea bass with citrus, truffle and ricotta ravioli, or mushroom and aged-cheese risotto.
