Vineyard and terroir
The fruit comes from low-yield qualified vineyards and is harvested by hand. Parellada is sourced from 75-year-old vines at 340 m. Production takes place at the family winery in Sant Quintí de Mediona.
Grapes
50% Xarel·lo and 50% Parellada.
Vinification
The grapes are gently pressed in a century-old Dubois press. Production follows a minimal-intervention philosophy with natural settling.
Ageing
The wine spends 144 months in rima on its lees. Natural cork closures and controlled cellar conditions support the extended maturation, and every bottle is disgorged by hand.
Technical data
Brut Nature Cava de Paraje Calificado. The release is limited to 4,000 bottles.
Tasting profile
Golden yellow, with a fine, persistent crown of bubbles. The nose is fresh and expressive, combining green apple and citrus with toast, brioche and almond. The palate is lively and well structured; balanced acidity lifts the fruit, while a creamy, delicate texture leads to a long, silky finish with touches of honey and nuts.
Serving and pairing
Pair with mushroom and Parmesan risotto, mature cheeses such as aged Manchego, lobster or grilled langoustines, duck confit or magret, or free-range chicken with truffle.

The 2013 is identified as the latest vintage and received 144 months of ageing in rima.
