Vineyard and terroir
The fruit comes from Capezzana’s vineyards, where the soils comprise slate, limestone and clay.
Vinification
The grapes are harvested by hand from late September to early October. Alcoholic fermentation takes place in stainless-steel tanks at 26–28 °C.
Ageing
The wine matures for 12 months in 12 hl Allier oak barrels, followed by three months in bottle in the winery’s cellars.
