Vineyard and terroir
The grapes come from younger vines in the Santa Cristina in Pilli and Montefortini–Podere Lombarda vineyards, at 100–150 m. The sites have various exposures and sandstone and limestone soils. Planting density is 3,300 vines/ha in older blocks and 5,000 vines/ha in newer ones. The vines are trained to Guyot and spur-pruned cordon, and viticulture is certified organic. Average yield is 40 hl/ha.
Grapes
80% Sangiovese, 10% Canaiolo Nero and 10% Uva Francesca (Cabernet).
Vinification
Harvest takes place 15 days ahead of the fruit destined for Carmignano DOCG. The grape varieties are harvested and vinified separately. They are pressed immediately after picking, followed by temperature-controlled fermentation at 16°C.
Ageing
Maturation takes place in steel.
Technical data
Average production is 8,000 bottles per year, in 0.75 L bottles.
