Vineyard and terroir

The fruit comes from South Tyrol, where Merlot shows a different side from the one it develops in warmer regions. The altitude of the vineyards and the contrast between warm days and cold nights slow ripening, helping to retain freshness and structure and giving more defined acidity.

Vinification

The grapes are harvested by hand. Fermentation takes place in temperature-controlled stainless steel tanks, which preserves clean aromas and extracts the tannins with precision. Regular punch-downs during maceration build colour and structure.

Ageing

The wine is aged in oak barrels, where it gains notes of vanilla and spice and extra depth.

Tasting profile

Mature, focused and slightly austere, with an Alpine character. The acidity is defined and the feel focused; the wine is precise, taut and slightly restrained rather than soft and enveloping. Vanilla and spice notes come from the oak. The profile is concentrated and balanced, with a firm tannic structure. Powerful and serious, yet very food-friendly.
