Vineyard and terroir
The grapes come from two sites in Caldaro, Alto Adige. The "Leisenpuiten" vineyard lies at 500 metres above sea level, on sandy clay soils with excellent moisture retention. The "Klughammer" vineyard lies at 230 metres above sea level, on sandy, reddish soils rich in porphyry. The vines are trained using the Guyot system. Pinot Nero has thin skins and is a demanding variety, so it needs careful handling in the vineyard and at the winery.
Vinification
The grapes are harvested at optimum ripeness. Fermentation lasts 15 days in stainless steel tanks at a controlled temperature no higher than 28 °C. Malolactic fermentation takes place naturally.
Ageing
The wine ages for 12 months in French oak barriques.

Label / history
The text notes that wine was made in the Caldaro area before the Romans arrived, that some evidence points to winemaking there in the Iron Age, and that monastic workers developed it further during the Middle Ages.
