Vineyard and terroir
The grapes come from estate vineyards in the southeastern part of Castelnuovo Berardenga.
Vinification
The grapes are harvested and selected by hand from mid-September to early October. The bunches are dried naturally for three to four months, either hanging or laid out in places subject to pronounced temperature changes, allowing water to evaporate from the grapes. Fermentation then takes place with local natural yeasts in stainless-steel tanks for 12–14 days.
Ageing
After fermentation, the wine is transferred to large Slavonian oak casks. Although the statutory minimum is three years, it spends at least fifteen years in small oak barrels.
Tasting profile
Full and richly fruity, with balanced sugar and alcohol and good fixed acidity. This balance allows the aromas to develop and persist over time.
