Grapes

100% Malvasia Bianca di Toscana in the 2015 technical data; the wine profile names the variety Malvasia Bianca del Chianti. Its aromatic richness, thick skin and tendency toward oxidation make it suitable for this style of dried-grape wine.

Vinification

Whole clusters are hung individually from rails on vertical racks in naturally ventilated rooms. Noble rot develops during drying. The fruit is inspected weekly, allowing deteriorating grapes to be removed from any part of the room. After roughly three to four months, the highly concentrated grapes are pressed, normally in January following harvest. For 2015, harvest occurred during the first ten days of October, drying lasted three months, and pressing took place during the middle ten days of January 2016.

Ageing

The concentrated must ferments and matures in small caratelli of 50 and 100 L, made from oak, mulberry and cherry wood. The general description gives nearly eight years in cask; the 2015 technical data records 8 years and 5 months. Bottling took place on 15 November 2024, followed by 24 months of refinement in bottle in the estate cellar.

Technical data

The 2015 vintage has 13.23% alcohol, total acidity of 5.07 g/L, volatile acidity of 0.76 g/L, pH 3.60, residual sugar of 337 g/L and total dry extract of 397.20 g/L. Free sulfur dioxide is 6 mg/L and total sulfur dioxide 51 mg/L. Production comprised 1,219 bottles of 0.375 L. General annual production remains below 2,000 bottles, with less than 10% of the harvested grape weight becoming wine. The wine is certified organic.

Tasting profile

Bright amber-yellow in color and velvety on the palate, with intense, complex aromas of apricot, dried figs, toasted almonds, dates, caramel and coffee. Freshness brings balance to its delicate texture.

Serving and pairing

Suitable as a meditation or dessert wine. Pair with dry pastries, crème brûlée, blue cheeses or foie gras.
