Vineyard and terroir
The fruit comes from a single vineyard named after Princess Gavia, located at Novi Ligure in the Gavi region. The soils consist of stony clay and marl.
Vinification
After selection, the grapes are pressed. The clear must ferments gently for 20 days at a controlled temperature of 17–18 °C. The young wine is then clarified and bottled.
Label / history
The name refers to a story set in the sixth century. Gavia, daughter of Clodomir, King of the Franks, fled with the soldier she loved after her father forbade their marriage. The couple settled in a remote village in northwestern Italy and enjoyed its local white wine. After they revealed their identities, Clodomir forgave them, blessed their marriage and named the village and its wine after his daughter.
