Vineyard and terroir

The vineyards lie between approximately 98 and 299 m above sea level. The 2025 technical sheet describes varied, composite soil formations with a marked presence of stones and fossils, together with south and southwest-facing exposures. The Tregge section describes a very deep sandy soil containing fine gravel and abundant micro- and macro-elements, with an east–west exposure.

The vines are trained to Guyot at a density of 6,250 plants per hectare.

Grapes

A white blend of Viognier and Sauvignon Blanc. Exact proportions are not specified.

Vinification

The grapes are harvested early in the morning and receive a second selection at the cellar. The fruit undergoes 24 hours of cold maceration in tank followed by gentle pressing. Fermentation takes place in stainless steel, and malolactic fermentation is prevented.

Ageing

Viognier and Sauvignon Blanc are aged separately for 6 months on fine lees in temperature-controlled stainless-steel tanks, with lees stirring. The components are subsequently blended and bottled, followed by further bottle ageing before release.

Technical data

2025: 13% alcohol by volume. Annual production is limited to approximately 4,000 bottles.

Vintage notes

The 2025 growing season began with a cool, wetter-than-average spring and slightly early budbreak. A hot June was followed by a milder July with several showers, while the second week of August brought high temperatures. Harvest was consequently early and concentrated, finishing about one week ahead of the usual schedule. Rain in September contributed to the vintage's overall balance. The moderate conditions in July supported steady ripening, allowing the grapes to be harvested at optimal maturity.

Label / history

CON VENTO was first produced in 1985. Its name comes from a farm that once sheltered elderly priests who could no longer serve their parishes, functioning as a kind of convent. The name later acquired the sense of “hill of wind.” The wine was conceived to evoke the cooling Mediterranean breeze, expressed through a saline accent and freshness on the palate.
