Vineyard and terroir
The grapes come from Castelvecchio in the Gorizia Karst, near Sagrado. The landscape is arid and rocky, with a shallow stratum of red earth rich in iron and limestone. Constant ventilation and the nearby sea influence the site.
Grapes
100% Sauvignon.
Vinification
The grapes are harvested manually and gently pressed. Alcoholic fermentation takes place in steel tanks.
Ageing
The wine matures sur lie in steel tanks.

DOC Carso. Organic wine. Bottle format: 750 ml.
Tasting profile
Bright straw yellow with green reflections. The complex varietal nose opens with vegetal notes, including tomato leaf, followed by citrus, grapefruit and white peach. The palate repeats these aromatic impressions and finishes with a lightly salty, mineral character associated with the Karst terroir. The introductory profile also describes it as full, ripe and firmly structured.
Serving and pairing
Serve at 10–12°C. Pair with substantial first courses, grilled fish, fish soup and white meat. It also works with spicy and bittersweet Asian dishes.
