Vineyard and terroir
The grapes grow on limestone soils in Veneto.
Vinification
Harvest takes place from late September to early October, when the grapes have reached optimal ripeness. Picking is carried out both by hand and by machine. The fruit is destemmed and gently pressed. Maceration and fermentation take place in stainless steel tanks at controlled low temperatures, with fermentation lasting 12 days.
Ageing
The wine remains in the same stainless steel tanks on its fine lees for 3–6 months; these vessels are neutral.
Serving and pairing
It may be served as an aperitif or paired with seafood, vegetable salads, pasta with light sauces, or risotto.
Label / history
Tavernello is a Caviro brand. Caviro began in 1966, when several producers joined forces. It now brings together more than 41 wineries and 20,000 growers across Italy. Its average annual production is around 500 million litres, of which more than 200 million litres are exported.
