Vineyard and terroir
The Pinot Grigio grows in the cool Triveneto region of northeastern Italy. Caviro buys the grapes from partner growers who own vineyards there.
Vinification
Harvest runs from late August to early September, both by hand and mechanically. At the winery the grapes are destemmed and gently pressed. Fermentation lasts 12 days at 16–18 °C, to preserve the expressive aroma and the clean, bright flavour.
Ageing
The wine rests 3–6 months in steel tanks, which helps it keep its freshness and light character. It can be drunk young or after 3–5 years of bottle ageing.

Serving and pairing
Suited to aperitif, light salads and seafood. Serve chilled.
